Filipino scrambled eggs, what is it? Eggs scrambled with tomatoes and onions. A pretty simple and quick egg scramble to make for breakfast. I grew up eating this and love it best with bacon and garlic fried rice. YUM!

Serves 2:

  • 4 eggs
  •  1/2 of a small onion diced
  • 1 Roma tomato diced
  • Grated cheddar cheese
  • chopped green onion for garnish
  • salt and pepper to taste
  • oil

Directions:

  1. Beat your egg and season with salt and pepper.
  2. Heat oil and saute onion until soften and add tomatoes.
  3. Saute tomatoes until softened (not mushy). Season with salt and pepper.
  4. Add egg and scramble.
  5. Not traditional, but I love cheese on my eggs, add cheddar cheese.
  6. Garnish with green onions.

Eat with rice.
