Recipe:

Serves 1 as a meal or 2 as an appetizer:

Ingredients (adjust seasoning as needed):

1 1/2 cups of Chicken Broth

1 inch slice of ginger – 1/2 cm thick

2 garlic cloves smashed

1 green onion

1 tsp Shaoxing Wine

3/4 tbsp soy sauce (low sodium)

1/2 – 1 tsp sugar (optional)

2 baby bok choy

6 wontons

Chili oil (optional)

Splash of sesame oil (optional)

Squeeze of lemon juice (optional) – I like lemon in all my soups.

Garnish with green onions.

Steps:

  1. Dissolve chicken broth in water and add ginger, garlic, shaoxing wine, soy sauce and sugar.
  2. Bring to boil, cover and reduce to simmer for about 10 minutes.
  3. Blanch your bok choy in a separate pot (we don’t want the soup to turn green).
  4. After simmering your broth, add your wontons to the broth (or the same water you blanched your bok choy in and cook according to package instructions.
  5. Place your bok choy and wontons in a bowl.
  6. Add your broth to your bowl and dress with these optional choices: chili oil, splash of sesame oil and a squeeze of lemon juice.
  7. Garnish with green onions and enjoy.
  8. Please tag me on social media if you recreate this dish. It will help spread the love of my recipes with others and I would love to see and hear how yours turns out. THANK YOU FOR YOUR SUPPORT!
