Recipe:
Serves 1 as a meal or 2 as an appetizer:
Ingredients (adjust seasoning as needed):
1 1/2 cups of Chicken Broth
1 inch slice of ginger – 1/2 cm thick
2 garlic cloves smashed
1 green onion
1 tsp Shaoxing Wine
3/4 tbsp soy sauce (low sodium)
1/2 – 1 tsp sugar (optional)
2 baby bok choy
6 wontons
Chili oil (optional)
Splash of sesame oil (optional)
Squeeze of lemon juice (optional) – I like lemon in all my soups.
Garnish with green onions.
Steps:
- Dissolve chicken broth in water and add ginger, garlic, shaoxing wine, soy sauce and sugar.
- Bring to boil, cover and reduce to simmer for about 10 minutes.
- Blanch your bok choy in a separate pot (we don’t want the soup to turn green).
- After simmering your broth, add your wontons to the broth (or the same water you blanched your bok choy in and cook according to package instructions.
- Place your bok choy and wontons in a bowl.
- Add your broth to your bowl and dress with these optional choices: chili oil, splash of sesame oil and a squeeze of lemon juice.
- Garnish with green onions and enjoy.
