Dynamite Lumpia

Ending Filipino American History Month with this delicious Filipino street food snack, dynamite lumpia, which is the Filipino version of the jalapeno popper. It’s crunch, cheesy, spicy and savory.

Ingredients:
1/8 cup diced onion
3 cloves of minced garlic
3/4 cup corned beef
Garlic Powder
Black Pepper
Mozzarella Cheese
16 pieces of Serrano Chilli or Siling haba
Lumpia wrapper- I like using the brand Menlo
Egg wash
Vegetable or Peanut Oil

  1. Saute Onion and garlic until fragrant.
  2. Add corned beef to pan. Discard extra fat.
  3. Season with garlic powder and black pepper. Discard any excess oil.
  4. Make slits in chili lengthwise down the chili and on the top and bottom.
  5. Remove seeds and ribs with a spoon.
  6. Wash chilli, dry and stuff with cheese and corned beef.
  7. Place chili on a sheet, one layer and freeze for 30 minutes.
  8. You can transfer the chili to zip lock bags and freeze for later or start frying. Add vegetable or peanut oil to a pan for a shallow fry. Fry until golden brown.
  9. Serve with a dipping sauce. This is usually served with Mayo mixed with Banana Ketchup but I’ve seen some places serve with Sweet chili sauce mixed with mayo or Sriracha mixed with mayo.
