Honey Walnut Shrimp

This has been the most requested recipe from my  youtube subscribers.  Honey walnut shrimp is a popular dish that is served at most Chinese restaurants. This seafood dish consists of candied walnuts, crunchy shrimp, and a delicious creamy sweet sauce.  Enjoy this on an iceberg lettuce (like a wrap) or with steamed rice.

Here are the ingredients:

Candied Walnuts:

  • 1/2 cup walnuts
  • 1 tablespoon melted butter
  • 1/2 cup brown sugar
  • 1/2 cup water

Sauce- *Measurements will vary according to your taste.  This sauce may turn out really sweet. I’ve added measurements you can start off with and build from there according to your taste.  I italicized my measurements that I used according to my taste buds. 

  • *2 tablespoons – 4 tablespoons cup kewpie mayo (Kewpie mayo can be found at most Asian grocery stores. If you can’t find this, you can use regular mayonnaise.) (3 Tablespoons)
  • *1 – 2 tablespoons honey (I started off with 1 1/2 teaspoons but wanted it sweeter. I ended up using 1 Tablespoon)
  • 1 teaspoon – 1 tablespoon sweetened condensed milk (1 1/2 teaspoons)
  • *1 teaspoon – 1 tablespoon lemon juice (1 teaspoon)

Other ingredients:

  • 1 lb prawns/tiger shrimp
  • salt and pepper to taste
  • 2 eggs
  • 1/2 cup cornstarch
  • vegetable oil

Directions:

1. Add melted butter to walnuts.

2. In medium heat, pour water in a small saucepan and add the brown sugar.  Mix until sugar dissolves and the sauce thickens like caramel.  Once the sauce boils, add the buttered walnuts and let it cook in this sauce for 5 minutes. 

3. Remove walnuts from sauce and cool down for 20 minutes in the refrigerator.

4. In a bowl, mix the mayo, honey, sweetened condensed milk, and lemon juice until you have a smooth creamy sauce.

5. Peel, devein, and wash your shrimp.

6. Season your shrimp with salt and pepper.

7. Beat two eggs and pour over shrimp.

8.  Add the shrimp to your cornstarch and mix until the shrimp is coated with the cornstarch.

9. Heat oil in pan and fry your shrimp.  Drain shrimp on a paper towel.

10. Return shrimp to pan, walnuts, and sauce.  Mix to warm through.
