Creamy Cajun Pasta with Chicken

I have been seeing “cajun/spicy chipotle” type pasta dishes online and decided to make my version of my creamy cajun pasta with chicken. This dish is super flavorful and creamy. The cajun seasoning was just right and not overpowering. I also thought this dish tasted similar to Cheesecake Factory’s Louisiana chicken pasta. This was a crowd pleaser with my friends and I hope it will be for yours! Please like this video, it will help distribute this video throughout youtube. I appreciate all of your support!

Ingredients:

  • Chicken Thighs- 1 – 2 (depending on size) per serving
  • AP Flour Eggs beaten Bread Crumbs mixed with Parmesan cheese.
  • 1 Red Bell Pepper- diced
  • 1 Yellow Bell Pepper- diced
  • 1 package Baby bella mushrooms- sliced
  • ½ a Red Onion or 3 Shallots (I used shallots)- diced
  • Garlic- as much as you want-
  • minced Parsley or Basil for garnish
  • 1 cup of chicken broth
  • 2 cups of heavy cream
  • 1 cup of Parmesan Cheese- grated + extra for the breadcrumb mixture.
  • 1 tsp cajun seasoning
  • 1 tsp chili flakes (more or less depending on your spice level)
  • Salt & pepper to taste
  • 1 tbs Cornstarch mixed with 1 tbs water or chicken broth (slurry -optional)
  • Butter Canola or Vegetable Oil
  • Bowtie Pasta or Penne Pasta
  • Steps:
  • 1. Season chicken thighs with pepper and garlic powder- slightly season w/ salt (since we will be breading the chicken with parmesan cheese. 2. Dip chicken in flour, egg, and bread crumbs. Let it sit for 20 minutes.
  • 3. Melt butter w/ a little bit of oil and saute Onions and garlic until fragrant. Add mushrooms and saute for about 3 minutes. Add your bell peppers and saute for another 2 minutes.
  • 4. Add chicken broth, heavy cream, cheese, cajun seasoning and chili flakes. (Medium Low heat). – Mix well. Cook until sauce thickens. If you want a thicker sauce, add the slurry.
  • 5. Season with salt & pepper if needed.
  • 6. Cook pasta according to package instructions.
  • 7. Fry chicken thighs in non-flavored oil. (Canola or Vegetable oil)
  • 8. Mix all the sauce with the pasta.
  • 9. Top pasta with chicken thighs. 1
  • 0. Garnish with basil or Italian parsley and parmesan cheese.
