Taiwanese Popcorn Chicken

Today I am sharing my version of Taiwanese Popcorn chicken. I love ordering this snack whenever I am out having boba with friends. My version is crispy, light, tender and juicy. It really is addicting snacking on these crunchy nuggets. This dish is super easy and quick to make. Enjoy it as a snack or as meal on its own! Crunch away! I hope you give this recipe a try. Ingredients:

4 boneless chicken thighs with skin- If you can’t find any, just debone the chicken thighs.

2 tsp soy sauce

1/4 tsp salt

2 garlic gloves minced

1/2 tsp white pepper

1/4 tsp five spice

1 egg

2 cups of tapioca flour or sweet potato flour

Two handfuls of Thai BasilVegetable Oil for frying

Seasoning Salt Mix:

1 tsp white pepper

1/2 tsp five spice

1/2 tsp salt

1/2 tsp cayenne

1/4 tsp paprika

1 tsp garlic powder

Steps:

1. Cut your chicken into bite sized pieces.

2. Marinate chicken with soy sauce, salt, garlic white pepper and five spice for at least 30 minutes and maximum of 24 hours.

3. Add an egg to your chicken and mix.

4. Dust your chicken with tapioca flour and wait 5 minutes before dusting it again (double coating) and wait another 15-20 minutes. This will ensure your flour will stick to your chicken while frying.

5. Heat up oil and fry chicken until lightly golden brown.

6. Set chicken aside for 10 minutes.

7. Crank up the heat and double fry your chicken for about 2 minutes or until your chicken is golden brown and crispy and set aside.

8. Mix all ingredients for the seasoning salt.

9. Dust your chicken with the seasoning salt mixture.

10. Flash fry Thai basil.

11. Serve chicken in a bowl with Thai basil.
