Lobster Tail with Garlic Butter

It’s Friday! Today I will show you how I make my lobster tails with garlic butter. If you are abstaining from meat on Fridays, you should definitely try this dish. This is a quick dish to make. I’d say less than 30 minutes, including prep time. It only took 8 minutes to broil my lobster! It was delicious!

Ingredients:
- 2 Lobster Tails (4 oz)
- 2 tbs unsalted butter
- 2 garlic cloves minced
- 3 tsp. Fresh Italian Parsley chopped
- 3 tsp. fresh lemon juice (about half a small lemon)
- Salt & Pepper to taste
- Paprika for pop of color
Directions:
- Heat your oven to broil if it takes awhile to heat up.
- With a pair of kitchen shears, snip off the small fins called swimmerets.
- Flip your lobster tail over and cut through the shell stopping at the base of the tail.
- Crack the shell open and loosen the meat from the shell. I like to slip my finger on the bottom to loosen the meat.
- Carefully lift the meat, keeping it attached to the base. Press the two sides of the shell together and lay the meat on top of the shell.
- Discard the “vein running through the center of the lobster tail.
- Give your lobster tail a quick rinse.
- For the butter, melt butter, add your garlic and let the garlic infuse in the butter.
- Add lemon juice and discard the seeds.
- Add your parsley.
- Season lobster tail with salt, pepper, and paprika.
- Spoon as much of the butter you want on your lobster tail and broil until lobster is cooked.
- Broil your lobster until cooked. My lobster was only 4 oz each and it took about 6 minutes under the broiler. The tail was bright red and the meat was white. Lobster should have an internal temperature between 143-145. Do not over cook or your lobster will be rubbery.
