The ultimate Spam breakfast sammy.

There’s a restaurant in LA and Las Vegas called “Egg Slut” that used to have this amazing spam burger. I believe it is no longer on their menu, so I decided to recreate their sammy! This is great for brunch because it will fill you up! You just need a few ingredients and BOOM, you got yourself a delicious breakfast or brunch sammy!

Ingredients for one:

4 Hawaiian roll slices intact.

2 slices of low sodium Spam – (1/4 – 1/2″ thick is how I enjoy my spam).

half a stalk of a green onion

cold ice water

Sriracha sauce

Kewpie mayo

1 slice of Kraft American Cheese

2 eggs beaten

salt and pepper

Directions:

  1. Cut the green part of your green onion into sections. Slice the sections lengthwise into very thin strips.
  2. Place green onion strips in cold ice water until they curl up.
  3. For the white parts of the green onions, cut on a bias.
  4. Mix 1 part mayo with 1/4 part sriracha. Add more sriracha for more spice.
  5. Fry spam on medium low heat until crispy on both sides.
  6. Set spam aside on a paper towel.
  7. Beat your eggs and season with salt and pepper.
  8. Add eggs to pan and cook “omelette” style.
  9. Add as much of the white parts of the green onions to your egg.
  10. Slice Hawaiian roll in half and toast Hawaiian rolls in a toaster oven with the cheese on the inside of the top part.
  11. Dry green onion strips on a paper towel.
  12. Add sriracha mayo to the bottom part of the roll, top with the two slices of spam, add the egg, top with the green onion ribbons, and top with the other half of the Hawaiian roll with melted cheese.
