Salt and Pepper Calamari

If you love calamari/squid and seafood, you must try my recipe!!! This is a simple dish that is packed with delicious Asian flavors. Squeeze lemon on it to bring out the flavors and eat as is or dip it in chili sauce. There really is no set measurements for this recipe. You’ll have to go by your taste buds. Below is just an guide of how I “eyeballed” my measurements.

Ingredients:
3/4 lb of squid
2 tsp shaoxing wine
Salt, white pepper and garlic powder to taste
black pepper to taste (for flour mixture)
1/2 – 1 cup of cornstarch (eyeball as to how much you need for your squid)
1 egg beaten
Vegetable Oil for frying
3 clove of garlic chopped
3 tsp of red chili flakes
1 stalk of green onions chopped (separate the green from the white parts)
Lemon wedge
Directions:
- Clean your squid and pat dry.
- Score squid and cut into 1/4 inch pieces.
- Marinate squid with shaoxing wine, salt, white pepper, and garlic powder in the fridge for 30 minutes.
- Season cornstarch with black pepper, salt, and garlic powder.
- Dust calamari with the cornstarch mixture, dip in the egg, and back in the cornstarch mixture. Set aside for 20 minutes.
- Heat up oil and cook your squid until lightly pale golden (about 2 -3 minutes).
- Set squid aside.
- Add oil to a pan, saute garlic until fragrant, add chili flakes and the white parts of the green onion. Saute for about a minute.
- Drain off excess oil and add the garlic mixture to the squid.
- Toss the squid with garlic mixture and season with salt and pepper if needed
- Garnish with the green parts of the green onion and squeeze a wedge of lemon juice over the freshly cooked calamari.
- Serve ASAP as is or with a side of sweet chili dipping sauce.
