Ingredients:

Serves 2

2 cups of water

1.5 tsp of Dashi powder

8 oz of firm tofu cut into small cubes

1 tbsp mild sodium miso paste

1 tbsp dried wakame

*There really is no set measurements for wakame and tofu. You can use my measurements as a guide and add more or less depending on your preference.

Steps:

  1. Pour water in a small bowl and add your dried wakame. Rehydrate in water. Once hydrated, squeeze and remove excess water (about 5 minutes).
  2. Pour water into a pot and bring to a low simmer.
  3. Add dashi stock to the water and mix until dissolved.
  4. Add your miso paste on a fine mesh laddle/strainer mix until dissolved.
  5. Add your tofu until warmed through and wakame.
  6. Garnish with green onions.
