Quick and Easy Miso Soup

Ingredients:
Serves 2
2 cups of water
1.5 tsp of Dashi powder
8 oz of firm tofu cut into small cubes
1 tbsp mild sodium miso paste
1 tbsp dried wakame
*There really is no set measurements for wakame and tofu. You can use my measurements as a guide and add more or less depending on your preference.
Steps:
- Pour water in a small bowl and add your dried wakame. Rehydrate in water. Once hydrated, squeeze and remove excess water (about 5 minutes).
- Pour water into a pot and bring to a low simmer.
- Add dashi stock to the water and mix until dissolved.
- Add your miso paste on a fine mesh laddle/strainer mix until dissolved.
- Add your tofu until warmed through and wakame.
- Garnish with green onions.
