Mahi Mahi

If you’re looking for something quick to make, I recommend this recipe. Mahi Mahi was on sale at my local market. I never made it before, but this is the fish that I usually order when I see it on the menu, next to sea bass and halibut.
The mahi- mahi I order at restaurants are usually breaded or covered in some type of macadamia nut coating. I didn’t have macadamia nuts on hand so I needed to figure out another way to make this fish. I was thinking of baking it. When I took the fish out of the plastic to wash it, I noticed the fish was firm and thick. I figured it would be perfect to put on a grill. I decided to check what ingredients I had on hand. I had lemon, butter, herbs, bread crumbs, and certain sauces for me to make a marinade. I didn’t have much time on my hands so I decided to make a lemon herb butter for my grilled mahi-mahi.
If you don’t have mahi mahi, you can definitely make this with other fish or you can make this using scallops or shrimp.
4 – 1/4 to 1/2 pound of mahi- mahi fillets
6 tbs of unsalted butter
3 tsp lemon juice
2 garlic cloves minced
1/4 – 1/2 tsp of salt for butter (depending on your salt level)
1/4 – 1/2 tsp of fresh ground black pepper for butter (depending on your spice level)
1 1/2 Tablespoons of chopped basil leaves
Olive oil to coat mahi mahi fillets
salt and pepper to coat mahi mahi fillets
1. Rinse and pat dry mahi mahi fillets.
2. Drizzle/coat olive oil on fillets (the more, the better).
3. Season fillets with salt and pepper on both sides.
4. Heat your butter and lemon up in a sauce pan over low heat.
5. Add garlic and sauté until fragrant.
6. Add salt, pepper, and basil leaves.
7. Once all melted, leave butter on low heat or place lid on pan and turn off heat to keep warm.
8. Warm your grill pan over medium heat.
9. Spray cooking spray on grill pan and add your fillets once warmed.
10. Cook fillets for 4-6 minutes (depending on thickness of fish) on one side.
11. Flip fish over when you see the bottom half turn white, lower heat to medium low and cook your fish for the same amount of time or until your fish is completely cooked.
12. Transfer fish to plate and spoon butter over fish.
