Arroz Caldo

I was sick last week and wanted to eat something comforting and good for my soul. Arroz caldo is a Filipino soup consisting of rice, chicken, ginger, garlic and onions. This dish will definitely make you feel better when you are not feeling good. This is a total comfort dish that you can also enjoy during cold and rainy weathers. I hope you give this dish a try! Ingredients:

1 large chicken breast or 3 chicken thighs

1/4 cup diced onion

4 garlic cloves minced

1 tbsp grated ginger or finely chopped

3/4 cups Jasmine rice

3-4 cups of water (w/ 1 tsp chicken bouillon per 2 cups of water) or chicken broth

black pepper and fish sauce to taste

Garnish: Boiled egg, green onions, squeeze of lemon or calamansi, chili oil, fried garlic and crushed chicharon

1. Season your chicken breast with salt, pepper and garlic powder. Add oil to a pot and brown your chicken breast on both sides. Set aside.

2. Ditch some of the oil in the pot and on medium low, saute your onions, garlic and ginger until fragrant.

3. Add your rice and toast rice – do not burn it!

4. Chop your chicken into bite sized pieces and add it and the juices back in the pot.

5. Add your broth. Bring to boil and simmer until cooked through. If you want your broth less soupy, start with 3 cups. If you want your broth soupy, add more broth.

6. Season with pepper and fish sauce.

7. Garnish and enjoy!
