Bucatini Carbonara

Ingredients:

1/2 lb Bucatini Pasta

4 Large Egg Yolks

Freshly Cracked Black Pepper

1/4 Cup of Pecorino Romano

1/4 Cup Parmesan Cheese

8 oz Pancetta Olive Oil

Steps:

1. On a cold pan, add 1 Tbsp olive oil and pancetta. Cook on low until pancetta is nice and crispy. Set pancetta aside and reserve the oil.

2. In a bowl, combine egg yolks, black pepper and cheese (the sauce). Mix well.

3. Boil water and salt. Cook pasta according to package instructions.

4. You may mix your sauce over the boiling pasta water, but be careful not to cook your sauce.

5. Add a couple of spoonful of the pancetta oil to the sauce and mix well.

6. As soon as the pasta is done cooking, transfer it to a bowl, add the sauce and mix quickly.

7. Add some pasta water to the pasta and mix quickly. We want to mix quickly so the egg yolk will not cook.

8. Top with pancetta and additional cheese.

9. Serve right away!
