Kim Chi Fried Rice

Kim Chi Fried Rice- what a perfect way to get rid of your kim chi left overs! I first saw this on a menu at a Korean restaurant and thought it sounded odd. When my friends ordered it and I had some, wow, it was delish! What a way to wake up boring left over steamed rice.
You can make this rice with whatever type of protein you have. You can make it with bacon, beef, spam, hot dogs.. you name it! I had chicken breast defrosting in my fridge so I decided to use chicken.
Ingredients:
- 1 cup of sour Kim Chi chopped up with juice
- Two cups of day old rice
- Your choice of protein chopped (pork, chicken, beef, tofu)
- 2 sliced green onions
- garlic clove minced
- salt and pepper
- sugar
- Vegetable
- Drizzle Sesame oil
- 1 egg
- Revised recipe: 1 tsp gochujung or more depending on your spice level.
- Saute garlic until fragrant.
- Add chicken to pan and season with salt and pepper.
- When meat is brown, add sour kim chi and cook for 5 minutes.
- Add sugar according to your taste buds to balance sourness of dish.
- Add rice to the pan.
- Add half of your green onions.
- When rice is heated thru, push rice to side of pan.
- Add sesame oil to side of pan and fry or scramble your egg and mix with the rice when done cooking.
- Garnish rice with the rest of your green onions.
