Mussels with Garlic and Wine Sauce

I love seafood. I especially love ordering mussels that gets served with a broth because I love dipping my crusty bread in that sauce. Perfect dish to make if you are a pescatarian or if you are being abstinent from meat. You can serve this as an appetizer or eat as a meal. Not an original recipe, but made a few editions from the original one =)
Here is my recipe that will serve 2-3 people.
- 3 lbs of fresh mussels
- 1/4 cup of flour
- 2 tbs of olive oli
- Butter
- 1 cup of chopped shallots
- 2 tbsp of minced garlic
- 14 oz can of diced tomatoes drained
- 1/3 cup of italian parsley
- 1 tbsp of fresh thyme
- 1 cup of pinot grigio
- salt and pepper
- Clean the mussels and remove beard as shown on the video below and discard any mussles that will not close.
- In a pot, heat up the butter and olive oil.
- Saute garlic and shallots in the pot and cook until translucent.
- Add tomatoes, parsley, salt, pepper, thyme, and wine.
- Bring mixture to a boil and add mussels.
- Cover pot and cook over medium heat until all mussels are open.
- Make sure to shake the bottom of the pot so the mussels will not burn.
- Discard any mussels that do not open.
