Soy Chorizo Omelette

I love eating Chorizo, however, I found a healthier alternative – SOY chorizo! Although soy chorizo is plant based, you are still getting the same amount of protein as you would get eating beef / pork chorizo.

There really isn’t set measurements for this recipe, it is all according to your preference. Please use my video as a guide to see how much of the ingredients I used.

This serves between 1-2 people depending on your appetite.

I did make my own guac and pico de gallo.

If you would like me to make a video on pico de gallo, please give this video a thumbs up!

Ingredients:

  • Soy Chorizo
  • Eggs (2)
  • Salt and Pepper
  • Onions
  • Jalapeno
  • Cotija Cheese
  • Guacamole
  • Pico De Gallo
  • Crema/Sour Cream

Steps:

  1. Saute onions and jalapenos until softened.
  2. Add your soy chorizo and cook until darken and crips.
  3. Beat your egg with salt, pepper and milk (optional).
  4. Add egg to pan and cook on low heat.
  5. Swirl pan around so your egg is completely cooked
  6. Fold omelette in half.
  7. Place omelette on your plate, top with 1/3 pico de gallo, 1/3 guac and 1/3 crema/sour cream.
