Soy Chorizo Omelette

I love eating Chorizo, however, I found a healthier alternative – SOY chorizo! Although soy chorizo is plant based, you are still getting the same amount of protein as you would get eating beef / pork chorizo.
There really isn’t set measurements for this recipe, it is all according to your preference. Please use my video as a guide to see how much of the ingredients I used.
This serves between 1-2 people depending on your appetite.
I did make my own guac and pico de gallo.

Ingredients:
- Soy Chorizo
- Eggs (2)
- Salt and Pepper
- Onions
- Jalapeno
- Cotija Cheese
- Guacamole
- Pico De Gallo
- Crema/Sour Cream
Steps:
- Saute onions and jalapenos until softened.
- Add your soy chorizo and cook until darken and crips.
- Beat your egg with salt, pepper and milk (optional).
- Add egg to pan and cook on low heat.
- Swirl pan around so your egg is completely cooked
- Fold omelette in half.
- Place omelette on your plate, top with 1/3 pico de gallo, 1/3 guac and 1/3 crema/sour cream.
