Hamachi Kama / Yellowtail Collar

Hamachi Kama aka Yellowtail Collar is one of my favorite dishes to order at a Japanese restaurant. You will be lucky if they serve this because restaurants will usually sell out quick. This fish is meaty, fatty and tender. You can eat it alone as a meal or with a side of veggies. I like this dish because it’s simple to make and you just need a few ingredients. Enjoy this dish during Lent, if you are abstaining from meat on Fridays / Holy Thursday.

Ingredients:
- 1 Hamachi Kama/Yellowtail Collar or Salmon Kama
- Salt
- White Pepper
- Vegetable Oil
- Ponzu Lemon
- Slice
Instructions:
1. Preheat your air fryer or oven to 450F / broil
2. Wrinkle your foil and place on your baking tray
3. Drizzle oil and brush on foil.
4. Wash your fish and pat dry. Add oil to skin.
5 Place fish skin side down and season with salt and pepper.
6 Broil for 8-15 minutes, depending on size. You can flip the fish over, halfway, if the skin is not crispy.
7. Serve with Ponzu and lemon slice.
