I’m always busy during the week and by the time I get home, I want to whip up something quick for dinner. I decided to make Pad Kra Pao (Thai Basil Chicken). Pad Kra Pao is a popular Thai street food that has the perfect balance of sweet, savory and spicy. This dish takes less than thirty minutes to make and is one of my favorite dishes to order when I go to a Thai restaurant. You can make this dish with your protein of choice and you can customize it if you want more spice or less. Holy basil is traditionally used in this recipe, however living in North America, it is hard to find. I used Thai basil as a substitute. You can find Thai basil at any Asian grocery store. This dish is enjoyed with steamed rice but if you want to be extra, you can pair this dish up with an Asian style fried egg- crispy corners with runny yolk. YUMMMMMMMMMMM! If you have left overs, this dish will taste even better the next day!

Serves 4-5 people:

Ingredients:
5 Thai Chilis (more or less depending on your spice level.)
1/2 a bulb of garlic (I love garlic!)
2 tbsp Oyster Sauce
2 tbsp low sodium soy sauce
3 tsp dark soy sauce
4 tsp fish sauce
4 tbsp water
3 tsp white sugar
1 small onion diced.
1 small – medium sized red bell pepper cut into thin 3″ strips.
650 grams / 1.44 lbs of ground chicken.
2.5 cups of basil (loosely packed)
Vegetable Oil
Salt & Pepper to taste
White steamed Jasmine rice
1 egg per person (Optional)

Steps:

  1. Using a mortar and pessel, pound your chilies.
  2. Once chilies have broken down, add garlic. Pound until the garlic and chili turns into a paste. If you don’t have a mortar and pessel, chop up your garlic and chilies finely.
  3. For the sauce, mix oyster sauce, soy sauce, dark soy, fish sauce, water and sugar. Stir until the sugar dissolves.
  4. Heat up oil over medium heat and add your chili and garlic paste. Saute until fragrant.
  5. Add your chicken and turn the heat up to medium high. Toss chicken so the chicken separates and you don’t have big chuncks.
  6. When chicken is half way done cooking, add the onions, bell peppers and sauce.
  7. Coat the chicken with the sauce.
  8. Once chicken is cooked, turn the heat off and add your basil.
  9. Taste and adjust seasoning as needed.
