Hi Guys, In honor of Filipino American History Month, I decided to share this semi-homemade Palabok recipe. Palabok is one of my favorite Filipino noodle dishes. What I like is the umami you get from the sauce.. NOM NOM NOM. This dish is pretty quick and easy to do. This dish is a noodle dish served with a shrimp based sauce with pork and topped with shrimp, tofu, boiled egg, tinapa flakes, green onions and squeeze of lemon or calamansi.

Ingredients:
1 lb ground pork
4 cups achuete/annatto water
2 pieces of Knorr Shrimp Bouillon Cube
1/4 cup tinapa flakes
1/2 cup cornstarch mixed with 1 cup of water (slurry)
1 medium onion finely chopped
1/2 bulb of garlic minced
Fish sauce – to taste
Black pepper – to taste
Salt – to taste
14 oz Palabok noodles/Cornstarch noodles- I used Super Q brand

Optional Toppings:
Boiled shrimp
Green onions chopped
Fried tofu cubed
Crushed chicharon
Hard boiled egg cut in half or quarters

Directions:

  1. If you’re going to add eggs, tofu and shrimp to your palabok, boil your eggs, fry your tofu and blanch your shrimp.
  2. Cook palabok noodles according to package instructions.
  3. In a sauce pan, heat up oil, saute onions and garlic until fragrant.
  4. Add your ground pork and cook until brown.
  5. Once pork browns, add your tinapa flakes.
  6. Add 4 cups of annatto water and your shrimp cubes.
  7. Once sauce comes to a boil, add your slurry and reduce to simmer until sauce has thicken.
  8. Season salt with fish sauce, black pepper and salt. Make sure not to over salt, as the sauce already has shrimp cube and tinapa flakes.
  9. To plate, add your cooked noodles, top with sauce and your toppings.
