Palabok

Hi Guys, In honor of Filipino American History Month, I decided to share this semi-homemade Palabok recipe. Palabok is one of my favorite Filipino noodle dishes. What I like is the umami you get from the sauce.. NOM NOM NOM. This dish is pretty quick and easy to do. This dish is a noodle dish served with a shrimp based sauce with pork and topped with shrimp, tofu, boiled egg, tinapa flakes, green onions and squeeze of lemon or calamansi.

Ingredients:
1 lb ground pork
4 cups achuete/annatto water
2 pieces of Knorr Shrimp Bouillon Cube
1/4 cup tinapa flakes
1/2 cup cornstarch mixed with 1 cup of water (slurry)
1 medium onion finely chopped
1/2 bulb of garlic minced
Fish sauce – to taste
Black pepper – to taste
Salt – to taste
14 oz Palabok noodles/Cornstarch noodles- I used Super Q brand
Optional Toppings:
Boiled shrimp
Green onions chopped
Fried tofu cubed
Crushed chicharon
Hard boiled egg cut in half or quarters
Directions:
- If you’re going to add eggs, tofu and shrimp to your palabok, boil your eggs, fry your tofu and blanch your shrimp.
- Cook palabok noodles according to package instructions.
- In a sauce pan, heat up oil, saute onions and garlic until fragrant.
- Add your ground pork and cook until brown.
- Once pork browns, add your tinapa flakes.
- Add 4 cups of annatto water and your shrimp cubes.
- Once sauce comes to a boil, add your slurry and reduce to simmer until sauce has thicken.
- Season salt with fish sauce, black pepper and salt. Make sure not to over salt, as the sauce already has shrimp cube and tinapa flakes.
- To plate, add your cooked noodles, top with sauce and your toppings.
