Pork Guisantes / Pork & Peas (Filipino Food)

Hi Guys, In honor of Filipino – American History Month, I wanted to share a simple recipe that is flavorful and kid friendly! Today, I am making Pork Guisantes which is also known as Pork and Peas. This dish requires a few ingredients and is cooked in one pot. You will have dinner served in less than 30 minutes. This is a pork dish that is stewed in a tomato broth. The pork is tender and the peas add a nice sweetness to the savory broth. This dish is very popular in the Philippines and in Hawaii. I hope you give this dish a try!
Ingredients: 1 small red bell pepper cut into 1/4 inch strips 1cup chopped onions 5 cloves minced garlic 1 lb pork butt cut into 1 inch strips 1/2 cup tomato sauce 1 cup water 1 bay leaf 1/2 cup frozen sweet peas 1.5 tsp fish sauce 1.5 tsp light soy sauce Salt and Pepper to taste
Steps:
1. In a pot, heat oil and on medium high heat, sauté red bell peppers for about 2 minutes and set aside.
2. Lower heat to medium low, add oil if needed and add your onions and garlic. Cook until onions have softened and set aside.
3. In the same pot, add oil if needed and in 2 batches, lightly brown your pork. Once pork in brown on all sides, return the onions and garlic to the pot, add water, tomato sauce, fish sauce, soy sauce, bay leaf, salt and pepper.
4. After 20-30 minutes, meat should be tender, add the red bell peppers and peas. Turn off heat and serve with white rice.
