Lechon kawali is a Filipino deep fried pork belly that is tender, juicy and crispy. Instead of the messy and unhealthy deep frying technique, why not try my quick and easy air fried version. This dish is addicting, especially if you’re having this dish with friends over drinks. You can enjoy this dish on its own as an appetizer, a side dish, or main with rice and veggies. There are no set measurements to this recipe, as this is all to taste.

Serves 1-2 as an appetizer:

Ingredients:

  • 1 lb slab of pork belly (In my video, my slab was about 2″ wide X 9″ long)
  • Baking Soda
  • Kosher Salt
  • Distilled Vinegar (optional – for bigger than 2″ wide pork bellies)
  • Black Pepper
  • Garlic Powder
  • Five Spice
  • Vegetable Oil

Directions:

  1. Cut slits on the pork meat.
  2. Pat dry the skin of the pork belly.
  3. Prick the skin of the pork belly with a meat tenderizer, fork or sharp skewer.
  4. Optional – brush vinegar on the skin.
  5. Sprinkle salt and baking soda on the pork belly and massage it onto the skin.
  6. Place your pork belly on a rack, over a plate and place it in the fridge, uncovered, for 24 hours. Check on pork belly and wipe off any excess moisture during this process.
  7. The next day, take pork belly out 30 minutes before cooking. Rub black pepper, salt, garlic powder, and five spice on the meat and let this marinate for 30 minutes.
  8. Pat dry skin.
  9. Preheat airfryer to 325F.
  10. Once air fryer reaches 325, brush pork skin with a thin layer of vegetable oil and place your pork belly in a dish the same size as your pork belly. If you don’t have one, you can create one using foil.
  11. Air fry pork for 20 minutes (times may vary depending on your cut/weight of pork belly).
  12. After 20 minutes, drain excess oil from dish and air fry your pork belly at 425F for 5 minutes or until your pork belly’s skin is nice and crispy.
  13. Let your pork belly rest for 10 minutes before slicing. Your pork belly will be tender, juicy and extra crispy. Serve with Mang Tomas all purpose sauce or Spicy Filipino Vinegar.
