Roasted Garlic Red Potatoes

Looking for a side dish to serve?  Try my sister’s roasted garlic red potatoes. These potates are perfectly tender in the inside and crispy on the outside. This recipe is really simple and quick to make.  This is definitely a recipe builder. You can change this recipe as well by adding rosemary and thyme or by adding pepper for some heat.

Ingredients:

  • 2 lbs of red potatoes cut in quarters
  • 3 cloves of garlic minced
  • 1 juice of a lemon
  • 1/4 cup of unsalted butter
  • salt to taste
  • Parmesan Cheese
  • Parsley
  1. Rinse and pat dry your red potatoes
  2. In a bowl, to create the sauce, combine garlic, lemon juice, butter, and salt.
  3. Microve the sauce until butter has melted.
  4. Preheat oven to 350 degrees.
  5. In a medium baking dish mix potatoes and sauce.
  6. Sprinkle parmesan cheese.
  7. Cover with foil and bake until potatoes are fork tender (about 30-35 minutes).
  8. Uncover dish and stir potatoes.
  9. Bake for an additional 10-15 minutes, or until potatoes are crispy on top.
  10. Garnish with parsley.
