Chicken Fried Steak

I love chicken fried steak, Every Sunday, during football season, when I am not at the game, I go to this restaurant in San Diego and always order the chicken fried steak for brunch. I wanted to recreate this dish at home. This dish has the most crispy batter with a juicy tender steak inside. I love how the gravy gives it a good creamy touch, which I usually put on the side.
Ingredients:
- 1 1b of Beef round steak
- salt and pepper to taste
- Vegetable Oil
Flour mixture:
- 1/2 tsp of mix black pepper
- 1/4 tsp of salt
- 1/2 tsp garlic powder
- 1/2 tsp of paprika
- 1/2 cup of all purpose flour
- 2 eggs beaten
- splash of milk
Gravy:
- salt and pepper to taste
- 3 tbs. of butter
- 3 tbs. of flour
- 1 cup of chicken broth
- 1/4 cup of whole mik
- 1/4 tsp of fresh thyme
- Tenderize your steak until 1/4 inch thick and season both sides with salt and pepper.
- In a bowl, mix black pepper, salt, garlic pepper, paprika, and flour.
- In a separate bowl, beat the eggs with the milk.
- Dredge meat in flour and dip in egg mixture and repeat one more time.
- Set steaks on a wire rack and let it sit for 20 minutes before cooking.
- Heat up vegetable oil in an iron skillet over medium high heat.
- Preheat oven to 250 degrees.
- Once oil has heated, cook meat in batches until golden brown on both sides.
- Let steaks rest on a clean wire rack and place in oven to keep warm.
- In the same pan, ditch the fat and keep the pan drippings.
- Melt butter.
- When butter has melted, whisk flour and cook through.
- Add chicken broth and whisk until gravy reaches a boil.
- Add milk and whisk until gravy becomes thick.
- Season with he thyme, salt and pepper.
Serve gravy on the side or on top of the chicken fried steak.
