Spam Musubi

Whenever I go to Hawaii, I always buy Spam musubi.. You can eat a few as a meal or a snack. You can find Spam musubi at almost any restaurant in Hawaii, their grocery stores, and their 711s! I actually played around with many recipes and this recipe seemed to work well with me.
Ingredients and Tools:
- 1 can of Spam Lite or Less Sodium
- 4 full sheets of Nori
- Furikake Rice Seasoning
- 2 – 3 cups of Sushi grade rice (I used Nishiki brand) (depending on how much rice you want to use.)
- Musubi mold (I had the longer mold. You can purchase this mold on Amazon or any Daiso store).
- If you don’t have a musubi mold, you can use the spam can. You will need to remove the top and the bottoms of the can. Be careful not to cut yourself.
- Sushi roll or aluminum foil
Teriyaki Sauce Ingredients:
- 2 tbs. of brown sugar or regular sugar
- 1/4 cup of warm water
- 3/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp black pepper
- 3 tsp of low sodium shoyu or low sodium soy sauce
- 3 tsp of sweet mirin (rice wine)
- 1 1/2 tsp of sesame oil
- * optional pinch of ground ginger (not shown in the video)
Instructions:
- Add all ingredients for the sauce and mix until sugar dissolves.
- Slice your spam into 8 equal slices.
- Preheat your oven to 250 degrees and toast your nori sheets for about 10 minutes and set aside. * This step is optional. A friend of mine who is a sushi chef told me toasting your nori sheets will bring more of the natural flavor and taste better. You can toast it in a toaster oven or over fire. I found it easier to toast it in the oven.
- Marinate your Spam for 15 minutes.
- Add some oil to a pan and cook your spam until carmelized.
- Add the rest of the marinade and cook until marinade evaporate or reduces by half. You can spoon the marinade on top of the spam when ready to be wrapped.
- Place your nori sheet shiny side down on a sushi roller or foil.
- Place your mold on your nori sheet. I like to place it in the middle or at least 1/4″ above the bottom of the nori.
- Scoop as much rice as you want in your mold and press with top of mold.
- Sprinkle furikake.
- Add your spam pieces (usually 2 per nori sheet if you are using the longer mold). If you have sauce left over, spoon 1/4 tsp of that sauce over your spam.
- Add rice and press down with your mold.
- Remove mold and fold nori sheet over the rice. Seal nori sheet with water and use the foil to firmly tighten the musubi and cut in half.
- Serve warm. Enjoy!
