I love making quick sandwiches at home, especially when I have left overs. I usually buy rotisserie chicken and get bored with eating it as left overs. What I did was transform the left overs into a delicious sandwich. This sandwich does not have a recipe. You can pretty much add ingredients to this sandwich or just omit the ingredients you don’t like.
Ingredients:
- Equal parts mayo to pesto
- Croissant bread
- Butter
- Spinach
- Tomato
- Left over rotisserie chicken
- Salt and Pepper
- Bacon
- Provolone Cheese
Instructions:
- Combine mayo and pesto. I used store bought pesto.
- Lightly toast your croissant bread on a pan with light butter.
- Slather the pesto mayo on both bread slices.
- Add spinach, tomato, chicken (salt and pepper to season), bacon, and cheese.
