Chicken Meatballs

I was doing meal prep a few months ago and decided to film the chicken meatballs that was in my meal prep dish. I was originally going to make chicken lettuce wraps but I wanted something heartier since I came back from a run. Meatballs came into mind! This meatball recipe may not be the traditional beef, veal, and pork, but this chicken meatball is packed with tons of delicious flavors that you won’t realize you’re eating a chicken meatball. I paired this chicken meatball up with my homemade marinara sauce as well. I hope you give this recipe a try!
Ingredients:
- 1 package of ground chicken
- 1/2 cup of yellow grated onion
- 4 large garlic cloves grated
- 1 egg
- a big squirt of ketchup (a little over a tablespoon)
- 1/4 cup of plain bread crumbs
- 3 tablespoons of fresh Italian parsley finely chopped
- 1/4 cup of grated pecorino romano
- 1/4 cup of parmesan cheese + extra for garnish
- kosher salt and fresh cracked black pepper to taste
- 4 cups of Marinara sauce: My homemade marinara sauce recipe
- Serve with My Spaghetti Squash Recipe
Directions:
- Mix onion, garlic, egg, ketchup, bread crumbs, parsley, and cheese.
- Once ingredients are combined, add the ground chicken and mix.
- If you haven’s seasoned your mixture with salt and pepper, fry/cook a small piece of the mixture to taste. You will be able to determine how much salt and pepper you want to season your meatball mixture with.
- Season mixture with salt and pepper.
- Form meatballs into a ball. My meatballs were about a tablespoon size.
- Heat up oil and brown the meatballs.
- Heat up marinara sauce.
- Drain oil and add meatballs to marinara sauce.
- Return meatballs to the sauce. Cover and simmer for about 30 minutes. The meatballs should be cooked through.
- Garnish with more grated parmesan cheese.
