Hi Guys,

Today, I decided to make a shrimp boil (San Pedro style). This is perfect for those abstaining from meat during Friday Lent (omit the sausage). This dish is definitely a crowd pleaser and very quick to make. I hope you enjoy this dish as much as my friends and I did. I ate this dish with steamed rice , however at the San Pedro Fish Market, they serve this dish with steamed baby potatoes. Ingredients:

2 lbs of Large Shrimp deveined with shell on

1 package of andouille sausage sliced into rounds or biased (1″ thick)

Corn on the cob

1 Red Bell Pepper sliced into strips

1 onion sliced into strips

1 Green Bell Pepper sliced into strips

1 Yellow Bell Pepper sliced into strips

2 Jalapeno sliced into strips (optional)

3 sticks of unsalted butter

1 tsp roasted garlic paste (for the butter) + 1 tbs (for the veggies)

Salt & Pepper to taste

San Pedro Seasoning

Hot sauce

Steps:

  1. Melt butter with garlic paste. Lightly season with salt and pepper. Do not burn / brown the butter.
  2. Boil corn until cooked
  3. Pan fry sausages until brown.
  4. Take some of the melted butter and add to your pan.
  5. Add the shrimp in one layer and cook until pink on the bottom, flip to cook the other side. Shrimp cooks fast. Do not over cook or your shrimp will turn out rubbery and tough (about 2 min per side on medium heat). Season shrimp with the San Pedro Seasoning. Once cooked, set aside.
  6. In the same pan, add more butter and saute bell peppers, onions, jalapeno and garlic paste. Lightly season with the San Pedro Seasoning mix.
  7. Once veggies are cooked to your liking, turn off heat, add sausage and shrimp back to pan, season with more San Pedro Seasoning mix and add the rest of the butter.
  8. Serve on the pan with corn on top.
