Longanisa Pasta

I was challenged to make a filipino fusion dish. I decided to make longanisa pasta. I love pasta and I love longanisa, so why not marry the two?
Here are the ingredients to serve 2:
- Sweet (or spicy) longanisa sausages
- Angel Hair Pasta
- Basil
- Salt and Pepper
- Red Chili Flakes (Omit if using spicy longanisa)
- Olive Oil
- Parmesan cheese
- Roma tomatoes
- Garlic
- Preheat oven to 450 degrees.
- Deseed your tomatoes and slice into small wedges.
- Minse your garlic.
- Mix tomatoes, garlic, salt, pepper, and olive oil.
- Add mixture to a baking tray and bake for 15-30 minutes.
- Take meat out of casing and slice more garlic.
- Heat olive oil and saute garlic, red chili flake and meat.
- Discard the “fat” cubes.
- Heat water, salt water, and cook past according to package instructions until al dente.
- Once pasta is done, add pasta to pan with the meat, add roasted tomatoes, and parmesan cheese. Add a little bit of pasta water to “marry the ingredients” (optional).
- Serve on a plate and garnish with basil.
