Pot Roast

Looking for a warm and hearty meal? Try my pot roast. It’s pretty simple to make. Just throw your ingredients in a pot and let it simmer away for a few hours. This meal is perfect comfort food. Definitely a meal worth sharing.
Here are the ingredients to serve 8-10 people:
- 4 lbs of chuck roast
- salt and pepper
- olive oil
- 28 oz can crushed tomatoes
- 1-2 cups of beef broth
- 2 yellow onions halved
- 1/2 a head of garlic chopped
- 3 carrots cut into 3 inch pieces (see video)
- 2 celery stalks cut into 3 inch pieces
- 1 package of button mushrooms halved.
- 2 sprigs of fresh rosemary
- 4 sprigs of fresh thyme
- 2 bay leaves
- Season beef with a lot of salt and pepper.
- Heat oil in a heavy pot.
- Brown meat on all sides.
- Add the onions, garlic, carrots, celery, mushrooms, rosemary, thyme, bay leaves, salt and pepper, beef broth, and crushed tomatoes.
- Drizzle a little bit of olive oil and cover the pot with lid.
- Reduce heat to low and braise beef for 3 hours.
- Check on beef every 30 min and baste it with the pan juices.
- After 1 1/2, turn meat over for even cooking.
- Skim fat off of pot when done cooking.
- Slice roast before serving.
