Fried Calamari Rings

Calamari is one of my favorite appetizers to order at a restaurant. It is found in almost all types of American, Italian, and Asian restaurant menus. Calamari is basically squid that is breaded and deep fried. There are different ways to bread this. I just used all-purpose flour with mine.
Here is my recipe to serve 3 as an appetizer:
- 1 lb. of clean squid cut into 1/2 inch thick rings
- 2 cups of all-purpose flour
- 2 tbsp dried parsley
- salt and pepper
- lemon
- 1/4 cup of jarred marinara sauce
- 1 garlic clove minced
- canola oil
- Heat up oil in a large sauce pan to deep fry calamari
- Mix flour, parsley, salt and pepper in a zip lock bag.
- Toss the squid in the bag, in batches, and shake bag to coat calamari.
- Add the squid in batches to the oil and fry until crisp and lightly golden. It will take about 1 -2 minutes to fry. Do not over cook or your calamari will be tough.
- For the dipping sauce, heat up some oil to saute the garlic. Once fragrant, add your marinara sauce and heat through.
- To serve, sprinkle salt on your hot calamari and squeeze some lemon juice on it. Dip calamari in sauce and enjoy!
