Turkey Salad / Turkey Salad Wrap

Thanksgiving is right around the corner. What do you usually make with your left over turkey? I personally love making a turkey salad, which I enjoy as a wrap.

Ingredients:

5 cups of left over turkey breast chopped into bite sized pieces

2 stalks of diced celery

1 cup of diced shallots

1/4 cup chopped walnuts toasted

1/4 dried cranberries

1 tbsp dijon mustard

Mayo (according to your preference)

2 tbsp grated Parmesan cheese

*Depending on how your turkey was seasoned, start off with:

1/2 tsp cumin

1/2 tbsp garlic powder

1 tsp ground black pepper

1/2 tsp salt

1/2 tsp dried thyme

2 tsp chopped Italian parsley (fresh)

*Optional, grated lemon zest ( 1 – 2 tsp)

*To make wraps, you will need flour tortillas, provolone cheese (or your cheese of choice), and red leaf lettuce.

Instructions:

Combine all ingredients in a bowl. Chill in a fridge until ready to serve.

To make the wrap:

Warm tortilla with cheese.

Add lettuce on top of tortilla with cheese.

Add turkey salad and wrap.
