Cheesy Beefy Lasagna

I usually go to potluck parties during NYE and my go to dish is my cheesy beef lasagna. This is not an authentic Italian recipe, but my spin on lasagna. If you love pasta, beef, and cheese, you will definitely love this dish! I hope you all have a safe and happy new year!!!

Ingredients:
*Depending on the size of your dish, you might have to double up this recipe. I used the standard rectangular baking dish size (9X9).
- 1 lb. of ground beef
- 1 yellow onion chopped
- 4 cloves of garlic
- 8 oz jar of tomato sauce
- 14.5 oz can of chopped stewed tomatoes
- 6 oz jar of tomato paste
- 8 oz box of no boil lasagna noodles
- 2 eggs
- 2 cups of ricotta cheese
- 1/2 cup of grated parmesan cheese + extra for topping
- 2 tsp. of chopped Italian fresh parsley
- 1 tsp garlic powder
- salt and pepper to taste
- 1 tsp. of dried Italian seasoning
- pinch of red chili flakes (or more depending on your spice level)
- 8 oz bag of shredded mozzarella cheese
- 8 oz bag of shredded cheddar cheese
- Preheat oven to 375 degrees.
- Butter the bottom of a lasagna baking dish.
- Add oil to pot and saute onions and garlic until translucent.
- Add ground beef and cook until brown. Season with salt and pepper. Drain fat when done.
- Add tomato sauce, stewed tomatoes, tomato paste, and red chili flakes to meat mixture. Lightly season with salt and pepper to taste.
- Cover and simmer (on low) and occasionally stir sauce for about 60 minutes on low or until sauce is nice and thick. Adjust salt and pepper seasoning if necessary.
- Mix eggs, ricotta, parmesan cheese, Italian parsley, season salt and pepper, and Italian seasoning in a separate bowl.
- Lightly add some sauce to bottom of baking dish.
- Over lap some of the noodles on top of sauce.
- Add 1/2 of the ricotta cheese mixture on top of noodles.
- Add 1/3 of the mozzarella cheese and cheddar cheese on top of ricotta cheese mixture.
- Pour 1/2 meat sauce and repeat steps 9-11.
- Add another layer of the noodles. Cover top layer of noodles with the rest of the meat sauce, mozzarella cheese, and cheddar cheese.
- Lightly dust top off with parmesan cheese.
- Cover and bake for 35 minutes or until fork tender.
- Take cover off and bake for additional 5-10 minutes or until cheese has completely melted.
