With the holidays approaching, I’m sure you will be having guests over. If you’re looking for a quick breakfast option, why not opt out of the usual and serve this hearty dish- Shakshuka. If you are not familiar with this dish, it’s a classic dish from North Africa. This is a hearty tomato based dish that is rich in flavor. It is usually served with poached eggs and crusty bread. Because it is so hearty, you can have this dish for lunch or dinner. I hope you try this simple but delicious recipe. You will not be disappointed!

Ingredients: Serves 2

*Use 20 cm – 24 cm diameter small circular pan

14.5 oz can of Fire Roasted Diced Tomatoes (minus the liquid)

1/2 a small onion chopped

3 garlic cloves

1/4 inch serrano pepper

1/2 of red bell pepper chopped

1 Tbs Tomato Paste

Garlic powder, Salt & Pepper to taste

1/4 tsp Cumin

1/2 tsp Paprika

2-4 Eggs

Feta Cheese

Chopped cilantro or Italian parsley

Steps: 1. Saute onions and garlic until fragrant.

2. Add bell peppers and serranos until semi cooked.

3. Add tomatoes and simmer until the consistency is to your liking. If you prefer a “soupier” base, add the liquid from the can or water.

4. Make a well and drop in your eggs. Cover and cook until the tops of the egg are white. Make sure to cook this on your lowest heat setting.

5. Top with feta cheese and cilantro or parsley.

6. Serve dish on the pan and with crusty bread.
