How to carve lechon.

Lechon (roast pig) is one of the most popular dishes that is especially prepared and served in a lot of Filipino parties, special occasions, and fiestas. The Philippines is not the only place in the world that served a roast pig. Roast pigs are also popular in Cuba, Hawaii, Latin America, and parts of Spain.

Carving the lechon is pretty tricky. I decided to film my father carving lechon at my nephew’s 1st birthday party. He decided to separate the skin from the meat, for those who do not like eating the crispy skin. Or course, this is when I started playing with the editing and filming, so please excuse the edits.

You’ll need sharp butcher knives, gloves, huge cutting board.
