Baked Salmon

If you’re in a rush and looking for something quick to make, try my simpled herbed baked salmon. This is also perfect if you have last minute guest coming by for lunch or dinner.
Here are the ingredients for 4 servings:
- 4 roma tomatoes
- 2 shallots
- 1 tsp of dried oregano
- 1 tsp of dried thyme
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- salt and pepper to taste
- 1 lb. of salmon cut/ divided into even slices
- Preheat oven to 400 degrees F.
- Clean your salmon and season with salt and pepper.
- Cut your salmon into even serving pieces (you will probably be able to divide salmon into 4 pieces).
- Chop tomatoes and shallots.
- Mix tomatoes, shallots, thyme, oregano, olive oil, and lemon juice in a bowl.
- You will need 4 pieces of foil (or however many salmon pieces you have). Brush the foil with a little bit of olive oil.
- Add each salmon piece on the foil, skin side down and top each salmon piece with a spoonful of the tomato mixture. Seal the salmon packet by wrapping the foil (as shown in the video).
- Put salmon packets on a sheet pan and bakeuntil cooked through (20-25 minutes).
