Shrimp Pasta with Garlic

This pasta was inspired from a restaurant across from where I work. The flavors are simple and requires just a few ingredients. If you love garlic, you will love this pasta!
Here are the ingredients:
- 1 package of angel pasta noodles
- Headless shrimp, devein and peeled.
- Steamed brocolli florets
- Feta Cheese
- Salt and Pepper
- 1 cup + 2 tbsp. of Olive oil
- 1/2 head of garlic- minced
- 1 package of Basil- chiffonade cut
- Package of cherry tomatoes halved.
- 2 tbs. Butter.
- Preheat oven to 400 degrees.
- On a sheet pan, lay out shrimp on baking sheet. Season with salt and pepper and drizzle with olive oil.
- Bake shrimp for 8-10 minutes.
- Chop 1/2 a bulb of garlic.
- In a small pot, heat 2 tbs. of butter with 2 tbls. of olive oil and saute chopped garlic until fragrant.
- To that garlic, add 1 cup of olive oil and simmer in low heat for 20 minutes.
- Strain out garlic infused oil into a bowl and save garlic.
- Boil water and season with salt. Cook pasta according to package instructions.
- Save two cups of pasta water if needed.
- Add pasta to bown and mix in some of the feta cheese.
- Add basil and mix with pasta.
- Add tomatoes and mix. You’ll start to see ingredients come together.
- Slowly add 1/4 cup of the oil and mix in with the pasta.
- Season pasta with salt and pepper. Add pasta water if you want more of a “thicker” sauce.
- Add brocolli to pasta, shrimp, and some of the reserved garlic.
- Make sure all ingredients are mixed well.
