Filipino Scrambled Eggs

Filipino scrambled eggs, what is it? Eggs scrambled with tomatoes and onions. A pretty simple and quick egg scramble to make for breakfast. I grew up eating this and love it best with bacon and garlic fried rice. YUM!
Serves 2:
- 4 eggs
- 1/2 of a small onion diced
- 1 Roma tomato diced
- Grated cheddar cheese
- chopped green onion for garnish
- salt and pepper to taste
- oil
Directions:
- Beat your egg and season with salt and pepper.
- Heat oil and saute onion until soften and add tomatoes.
- Saute tomatoes until softened (not mushy). Season with salt and pepper.
- Add egg and scramble.
- Not traditional, but I love cheese on my eggs, add cheddar cheese.
- Garnish with green onions.
Eat with rice.
