Pad See Ew

I had left over Chinese broccoli and steak, so I decided to make pad see ew. Pad see ew is a popular stir fried noodle dish from Thailand. What I like about this dish is that you can add any protein (shrimp, steak, chicken, or tofu) you want and most importantly, it is a quick dish to make at home.

Ingredients:

  • 1/2 lb of rib eye steak cut into thin slices
  • salt, pepper, and garlic powder to season steak slices
  • 3-5 garlic cloves minced, depending on your love for garlic
  • 2 eggs
  • 3 cups of Chinese broccoli (gai lan)- stems sliced at about 1 inch thick and leaves about 2 inches.
  • 16 oz of rice noodles, separated
  • 2 tbs oyster sauce
  • 1 1/2 tbs soy sauce
  • 1 1/2 tsp fish sauce
  • 3/4 tbs black/dark soy sauce
  • 3 tsp of white sugar
  • Vegetable oil
  • Optional Ingredients: lime wedge or Thai red chili vinegar

Directions:

  1. Season your steak with salt, pepper, and garlic powder.
  2. Add the broccoli stems to boiling water for two minutes, add the leaves and blanch with the stems for an additional minute (3 minutes total).
  3. Drain broccoli stems and leaves. Rinse with cold water to stop the cooking process. Afterward, set out on a paper towel to dry. It is very important to take out as much moisture as you can.
  4. Mix oyster sauce, soy sauce, fish sauce, black soy sauce, and sugar.
  5. Heat up oil in a walk.
  6. Saute your beef slices. Set aside in a bowl when brown on both sides.
  7. Saute garlic until fragrant.
  8. Add Chinese broccoli and saute for about a minute and set to the side of the wok.
  9. Crack egg in the wok and scramble.
  10. Add the rice noodles and stir fry until it loosens up.
  11. Add the sauce to the noodles and mix until the sauce coats all the noodles.
  12. Optional: Let your noodles toast in the wok until you see nice charred marks.
  13. Once your noodles are to your liking, add the beef slices (do not add the extra juice that the meat may have left behind in the bowl).
  14. Mix all ingredients together and serve.
  15. Optional: Squirt a wedge of lime over your noodles before serving or drizzle some Thai red chili vinegar.
