Potato Skins

Super Bowl is coming up, so I decided to create a quick appetizer. Try my easy potato skins using just 7 ingredients.

*Vegetarian option: Omit bacon

Serves: 1 – 2 people

Ingredients:

2 russet potatoes skin scrubbed, washed, and dry

Vegetable or Canola Oil

Green Onions (sliced)

Shredded Cheddar Cheese

Sour Cream

Crumbled Fried Bacon

Instructions:
1. Preheat oven to 400 degrees.

2. Prick potatoes with a fork.

3. Brush oil around your potatoes

4. Place potatoes on a rack and bake for one hour. At the 30 minute mark, make sure to turn and rotate the potatoes in the oven.

5. While waiting, fry up bacon and crumble.

6. After an hour, allow potatoes to cool down. Once cooled down, cut potatoes in half.

7. Preheat your oven to 425.

8. Create a “boat” by scooping out the flesh and leaving 1/4 of the potato. Do not discard the flesh you scooped out. You can use the flesh to make mashed potatoes.

9. Oil the insides and the outsides of the potato boat.

10. Season potatoes with salt.

10. Please potato boats on the baking rack and bake for 25 minutes. Turn/rotate at the halfway point.

11. Allow potatoes to cool down before handling.

12. Preheat oven to broil.

13. Season inside of potato with pepper. Top with cheese, bacon, and more cheese.

14. Broil until cheese melts.

15. Garnish with green onions and a dollop of sour cream.
