Bucatini All’Amatriciana (A Roman Dish)

Valentines Day is next week. Why not make your special someone this amazing pasta dish. This pasta dish has a few ingredients but is packed with so many wonderful flavors. You will need to use good quality ingredients for this dish.
Serving: 4 – 6 people
Ingredients:
1 package of Bucatini or Spaghetti noodles (I used Bucatini)
1 large onion diced
2-4 garlic cloves (depending on your love for garlic) (Optional: minced or whole)
8 oz of thick cut pancetta , guanciale, or bacon cut into 1/4″ cubes
2 tbs tomato paste
2 – 28 oz of San Marzano crushed tomato sauce
1/4 cup of Pinot Grigio
1/2 cup or more Parmigiano Reggiano grated
6 fresh basil leaves chiffonade
Red Chili Flakes
Salt and Pepper
Instructions:
- Heat up a small amount of oil and saute pancetta until crispy and most of its fat has rendered off.
- Saute onions, garlic, and red chili flakes until softened.
- Add tomato paste and toast in pan until warmed through. Mix with ingredients.
- Fish out garlic cloves if not minced.
- Pour wine over mixture and reduce by half.
- Add tomato sauce and season with salt and pepper.
- Bring sauce to a boil and simmer for an hour.
- While sauce is almost done cooking, in another pot, bring salted water to boil and cook your pasta until al dente.
- When sauce is done cooking, add basil leaves, cheese and mix. Adjust seasoning if needed.
- Transfer pasta to sauce.
- Garnish pasta with extra cheese and basil/parsley (optional).
