Lamb Chops with Garlic and Herb rub

Lamb chops. Definitely something I used to be afraid of cooking this. I mean it’s definitey on the expensive side when you buy these at the grocery store. So if you screw this up, you pretty much wasted your money. Try my method and I guarantee you will have the juiciest lamb chops ever! You can serve these chops as an appetizer by itself with a few people or with a meal. Not an original recipe, but made a few editions from the original one =)

Here is my recipe to serve 2:

  • 2 garlic cloves
  • 1 tsp fresh thyme
  • 1 tbspn fresh rosemary
  • salt and pepper
  • olive oil
  • 4- 6 lamb chops depending on size.
  1. Combine garlic, thyme, rosemary, salt, and pepper in a mini food processor. Pulse ingredients until combined and garlic is minced finely.
  2. Once ingredients are combined, add olive oil and pulse until a paste forms.
  3. Rub paste on both sides of the lamb chops and let the lamb chops marinate in the refridgerator for an hour or more.
  4. When ready to cook, take chops out of refridgerator and let it sit out for 20 minute, to come to room temperature.
  5. Heat grill pan over high heat and sear chops for 2 minutes on one side, and 3 on the other side.
