Avocado Pasta

This inspired recipe was given to me by Tim Principe. It consist of only a few ingredients and is quick and easy to assemble. All you really need is about 15-20 minutes. This pasta is very creamy and fulfilling. It will make you crave for more. I wanted to add protein to this dish, so I added shrimp.
Here are the ingredients to serve :
- 4 1/2 avocados + other 1/2 for garnish
- Handful of basil leaves
- 5 garlic cloves grated (I love garlic so I added 5 cloves. You can add more or less depending on your preference)
- Salt and Pepper
- Good olive oil
- Juice of 1/2 medium sized Lemon or 1 small lime
- Parmesan cheese or Parmigiano Reggiano
- Feta Cheese (for more flavor use garlic and herb feta cheese)
- 1/2 package of cheery tomatoes halved
- 3 handfuls of broccoli florets
- 1 lb. of angel hair pasta
- Shrimp (as many as you want) (Optional)
- To make avocado sauce, combine 4 avocados, basil leaves, garlic cloves, lemon, salt and pepper in a food processor.
- Once combined, slowly pour about a tablespoon of olive oil while food processor is still running. Scrape inside food processor so avocado mixture comes together and set aside.
- Boil water and generously salt your water.
- Blanch broccoli and set aside.
- Use the same pot to cook pasta according to package instructions.
- Reserve a 1/4 cup of pasta water in case you want to thin out your avocado sauce.
- Drain pasta and drizzle with olive oil (2-3 tbsp) to avoid the pasta from sticking.
- While pasta is hot, add the parmesan cheese.
- When cheese is incorporated, add avocado sauce and mix until ingredients are combined. If you want to thin out your sauce, start off with a tablespoon of pasta water. I like my sauce creamy so I did not add any pasta water to mine.
- Mix in broccoli, tomatoes, shrimp (optional), and feta cheese.
- For plating, garnish with more avocado slices and feta cheese.
If you are adding shrimp to this dish:
- Preheat oven to 400 degrees.
- Lay shrimp out on baking sheet and drizzle with olive oil. Season with salt and pepper.
- Bake shrimp for 6-8 minutes.
