Hawaiian Pork Fried Rice (Inspired by Kihei Caffe)

Whenever I visit Maui, I love stopping by Kihei Caffe for breakfast and always order their pork fried rice. Because I love this dish so much, I decided to recreate this, my way, at home! Enjoy this for breakfast, brunch, lunch or dinner! I think they use bacon, ham, and Portuguese sausage, but I wanted to use my left over char siu pork instead of ham. I love the sweet, savory, and smokiness it brings to this dish. If you love pork and fried rice, you will definitely love this dish!
Ingredients:
2 bacon slices chopped
cup of Portuguese sausage cut into small squares
2 eggs beaten
cup of Char Siu chopped (recipe: http://ivyskitchen.net/?p=880 )
1 tbs garlic
cup of shallots diced
1 tbs oyster sauce
1/2 tbs low sodium shoyu or soy sauce
1 tbs Maggi seasoning sauce
2 stalks of green onions chopped
Garlic powder, salt and pepper to taste
3 cups of day old steamed rice (I used Jasmine rice)
Instructions:
- Cook rice the day prior and leave it in the fridge.
- Cook bacon until nice and cripsy. Set aside on paper towel.
- Cook sausage until brown and carmalized.
- Add shallots and garlic. Saute until shallots are soft and garlic is fragrant.
- Set sausage to the side of the wok, add oil, add eggs and scramble.
- Add char siu pork.
- Add rice and mix with the ingredients.
- Mix oyster sauce, soy sauce, and Maggi seasoning and add it to the rice.
- Mix rice with the sauce mix and season rice with garlic powder, salt and pepper.
- Once everything is combined, garnish with bacon and green onions.
