Cinco de Mayo is coming up and I had avocados on hand so I decided to film my guacamole recipe. Guacamole can be served as a dip, as a side, or as a topping. I used part of the guac as a dip for my homemade fried tortilla chips and the other half for my guac burger….. MMMMMMMMMMMMMMM
Like my Twice baked potatoes recipe, this recipe does not have precise measurements. Below is just an estimation:
Ingredients/Directions:
- 3 ripe avocados, pitted and mashed
- juice of 1 lime
- 1/4 of a medium white onion chopped
- 1 large roma tomato deseeded and chopped
- 1 garlic clove grated.
- Depending on your spice level, 1/2 – 1 whole medium to small sized jalapeno (deseeded if you don’t want it too spicy) minced- I used 1/4 of a large sized jalapeno with the seeds left on.
- 1 tbsp. of fresh cilantro minced
- Depending on your taste 1/4-1/2 tsp. of cumin
- salt and pepper to taste
- Flour or corn tortillas – cut into 8 triangles
- Vegetable Oil for frying
- Salt to taste
- Mix ingredients1-9 listed above and set aside.
- Heat up oil. When oil is warm, add your tortilla strips and fry on both sides until golden brown.
- Let tortilla chips rest on paper towel to absorb excess oil.
- Season with salt
