Tuna Salad

Looking for a quick meal to fix up? Try my amazing tuna salad. This salad is packed with flavor and you will definitely want more! Serve this on it’s own, in a wrap, as a spread on crackers or toasted baguette slices, tuna sandwich, or tuna melt.
Ingredients:
- 1 – 12oz can of Albacore tuna in water (drain and toss out canned water)
- 1 celery rib diced
- half of a small shallot diced
- End of a green onion stalk (white part) diced
- 2 large sized eggs boiled and diced
- Lemon zest (1/3 of a small lemon)
- Squirt of lemon juice from one slice of lemon
- 1/2 tsp dried thyme
- garlic powder (as much as you want)
- 1/4 – 1/2 tsp. ground cumin
- Tsp. dijon mustard
- Light mayo (start with 1/4 cup and add as much as you want for your desired consistency).
- Salt and ground black pepper to taste
- Light sprinkle of paprika for color
- Light sprinkle of freshly grated Parmesan cheese
Instructions:
- Boil two eggs. Peel and dice after egg has cooled down.
- Drain canned tuna and toss out canned water.
- In a bowl mix all the ingredients together.
- Chill in the fridge before serving.
