Pancit Bihon / Pancit Guisado

In honor of Philippines Independence day, I decided to make Pancit Bihon / Pancit Guisado. This dish is simple to make in one pot! There are a bunch of steps on how to make this dish, but the outcome is delicious and rewarding!

If you are not sure what pancit is, pancit bihon or guisado is a rice noodle stir fry with veggies, meat, and seafood. You can omit certain ingredients depending on if you want this dish with only vegetables, with only seafood, or with only meat, or a mixture of what you want.

Pancit is usually always served at a Filipino party, a birthday celebration, fiestas, or any special occasions and is eaten for “longer life”.

Ingredients

  • 1 lb pancit bihon Rice Noodles
  • 1 medium sized onion chopped
  • 4 cloves minced garlic
  • 1 cup carrot
  • 1/8 lb. snow peas halved
  • 1/2 lb. pork cut into small thin slices/cooked
  • 1/2 lb. chicken cooked, deboned, and cut into thin slices
  • 1/2 small cabbage chopped
  • 1 cup baby shrimp cooked
  • 1 Chinese sausage cut into bite size pieces
  • 6 tbsp soy sauce
  • 3 to 4 cups chicken broth
  • *Double the soy sauce and chicken broth if needed.

Instructions

  • In a large pot, Saute the garlic and onion
  • Add the pork, shrimp and chicken. Season with salt and pepper. Heat through and set aside.
  • In the same pot, sautee the carrots, pea pod, cabbage. Set aside.
  • In the same pot, add chicken broth, bring to boil and simmer.
  • Add the soy sauce to chicken broth and mix well.
  • Add the pancit bihon (makes sure to first soak it in water for about 10 minutes) and mix well. Cook until liquid evaporates completely.
  • Put-in the vegetables and meat that were previously cooked and simmer for a minute or two.
  • Serve hot.
  • Squeeze fresh calamansi or lemon slice per serving and garnish with green onions.
