Chicken Afritada

I did an international collaboration video using chicken as the main ingredient. I am taking you to the Philippines with my version of Chicken Afritada. This recipe is simple, yet tasty. It is chicken stewed in tomato sauce. There are a lot different variations of this dish depending on what ingredients you put in. I’m not a fan of complex recipes, especially when it comes to Filipino cuisine. In my opinion, with Filipino cuisine, ingredients are always kept simple and delicious.
Ingredients:
- 2 lbs of chicken wings
- 1/4 cup of diced onions
- 2 garlic cloves minced
- *Optional: a few pinches of red chili flakes for some spice.
- 2 tsp of fish sauce
- Black pepper to taste
- 1/4 cup of low sodium chicken broth or water
- If using water, I like to add 1 chicken bouillon cube and lessen the fish sauce.
- 8 oz can of tomato sauce
- 1 bay leaf
- 4 oz pimientos
- 1 russet potato cubed and fried
- *Optional: Add 1/2 cup of peas for a colorful dish
Directions:
- Pan fry potatoes until golden brown and fork tender. Set aside.
- Heat up oil and saute garlic and onions until fragrant.
- *Optional- add chili flakes for spice.
- Add the chicken and season with fish sauce and pepper. Saute chicken until juice come out.
- Add your tomato sauce, chicken broth, and bay leaf.
- Bring to boil and reduce to simmer until chicken is tender and cooked through.
- Skim fat that floats to the top and season to taste.
- Turn off heat. Add pimientos, potatoes, and peas. Cover until peas are warmed thru.
- Serve with rice.
