Garlic Shrimp Pasta

My friends wanted to drop by last minute so I decided to make my garlic shrimp spaghetti. I always have the ingredients on hand and best of all, besides being a one-pot dish, it’s a quick meal that you can make in less than half an hour.  If you love garlic and shrimp, try this dish. I guarantee this will be your go-to dish for last minute entertaining.

*Option, as an appetizer, omit the pasta  and serve with French bread.

Ingredients:

  • 1 lb of spaghetti
  • 1 cup of reserved pasta water
  • 4 tbsp unsalted butter
  • Extra Virgin Olive Oil
  • 1 large shallot diced
  • 5 cloves of garlic minced
  • Pinch of red pepper flakes
  • 1 lb of shrimp – peeled and deveined
  • Salt and fresh ground black pepper to taste
  • 1/2 cup of Pinot Grigio or Sauvignon Blanc
  • Fresh lemon juice and zest from 1 lemon
  • 1/4 cup of fresh italian parsley leaves chopped

Directions:

  1. Salt water and cook pasta according to package instructions.
  2. Reserve 1 cup of pasta water before draining pasta.
  3. Melt 2 tbs of butter and olive oil in the pot.
  4. Saute shallots, garlic, and red pepper flakes until shallots are softened.
  5. Season shrimp with lemon zest, salt, and pepper.
  6. Add shrimp to the pot and cook until pink on both sides.
  7. Set shrimp aside.
  8. Add wine and lemon juice to pot until bubbling.
  9. Add remainder of butter and about 2 tbs. of olive oil.
  10. Season to taste.
  11. Return shrimp and pasta to the pot.
  12. Add reserve pasta water and mix.
  13. Garnish with parsley.
