Garlic Shrimp Pasta

My friends wanted to drop by last minute so I decided to make my garlic shrimp spaghetti. I always have the ingredients on hand and best of all, besides being a one-pot dish, it’s a quick meal that you can make in less than half an hour. If you love garlic and shrimp, try this dish. I guarantee this will be your go-to dish for last minute entertaining.
*Option, as an appetizer, omit the pasta and serve with French bread.
Ingredients:
- 1 lb of spaghetti
- 1 cup of reserved pasta water
- 4 tbsp unsalted butter
- Extra Virgin Olive Oil
- 1 large shallot diced
- 5 cloves of garlic minced
- Pinch of red pepper flakes
- 1 lb of shrimp – peeled and deveined
- Salt and fresh ground black pepper to taste
- 1/2 cup of Pinot Grigio or Sauvignon Blanc
- Fresh lemon juice and zest from 1 lemon
- 1/4 cup of fresh italian parsley leaves chopped
Directions:
- Salt water and cook pasta according to package instructions.
- Reserve 1 cup of pasta water before draining pasta.
- Melt 2 tbs of butter and olive oil in the pot.
- Saute shallots, garlic, and red pepper flakes until shallots are softened.
- Season shrimp with lemon zest, salt, and pepper.
- Add shrimp to the pot and cook until pink on both sides.
- Set shrimp aside.
- Add wine and lemon juice to pot until bubbling.
- Add remainder of butter and about 2 tbs. of olive oil.
- Season to taste.
- Return shrimp and pasta to the pot.
- Add reserve pasta water and mix.
- Garnish with parsley.
